INGREDIENTS
1 bunch radishes
1 1/2 lb carrots
1/4 cup Fresh feta cheese, crumbled
1/4 cup olive oil
2-3 Tbsp rice wine vinegar
2 Tbsp chopped fresh mint
2 Tbsp choppped fresh parsley
salt and pepper to taste
PREPARATION
- Finely chop or grate radishes and carrots.
- Add chopped herbs and feta cheese.
- In a separate bowl, combine olive oil, vinegar, salt and pepper and whisk until combined.
- Drizzle over confetti, toss and serve.
